- 110 gr Basa Fillet
- 40 gr Carrots
- 20 gr Egg Plant
- 20 gr Courgette
- 20 gr Green Beans
- 20 gr Sugar Snap Peas
- 65 gr Cauliflower
- 60 gr Chestnut Mushrooms
- 1.2 oz Sweet Onion
- 40 gr Spinach
- 6 Sprays Fry Light Coconut Oil
- Seasoning.
Method
Par boil all vegetables except onion, mushrooms and spinach.
Arrange vegetables in a baking dish except the spinach season with salt, pepper, garlic granuals, mixed herbs and paprika to taste and spray with fry light.
Place the Basa fillet on to some foil, season with dill and lemon juice to taste, wrap foil around fish to seal.
Cook both in the oven at about 180 degrees until the veggies start to crisp and the fish is cooked, you may need to take the veggies out for a few mins while the fish finishes cooking.
Place the spinach on-top of the cooked veggies and season lightly with salt and pepper, place the Basa on top of the spinach adding more lemon if you like, place back in the oven for approx 10 mins until the fish and spinach starts to bake and turn slightly crispy, take care not to burn the fish or spinach.
