I wanted to create a special occasion fish platter, I absolutely adore seafood, I have made one previously which was just under 500 calories, but this one I wanted it to taste extra special with a few goodies in it, you know the type to celebrate a birthday or anniversary, or to just say thank you for supporting me, but could i could justify the 819 Calorie !! tag that it had, of course I could it was for a special occasion afterall, and I still had over 600 calories left for breakfast and lunch, I could still eat as i did not go over my calorie deficit.
The Huge mistake i made was not the calories that were in the meal but the fact that i could still eat the same amount that i could before my weightloss journey began, obviously our stomachs shrink when we eat less, but nope i didn’t take this into account, I just saw fish fish fish and my mouth watered lol, i did polish off the whole platter and it was mighty good, unfortunately making myself feel unwell and a bit of a piggy, but can i just reiterate it was so so yummy.
So next time i will definitely split the meal into 2 and at a much smaller portion but with still the same tastes, and only half the calories. Plus will be quicker to prepare as i will only need to make one platter lol.
Recipe for ultimate seafood platter ( Serves 2)!!!!

- 125g Tuna Fish Steak.
- 1 smoked Basa fillet approx 110g
- 120g Skinless Wild Pink Salmon Fillet.
- 80g Mixed cooked Seafood selection, Mussel Meat, squid Rings. Prawns.
- 85g Raw Tiger Prawns.
- Large Splash of Ouzo.
- Half tin of chopped Tomatoes.
- Cinnamon Stick.
- Salt, Pepper, Garlic Granules, Mixed Herbs, Oregano, Dill, Bay Leaf.
- Half a lemon.
- 1 Teaspoon of whole grain mustard
- 80g Mushrooms. Chopped.
- Half a Red Onion. DIced.
- 30g Halloumi.
- 1 Tbsp Blue dragon, Original Sweet Chilli Sauce.
- Half Packet of Full Moon Hoi Sin and Garlic Stir Fry sauce.
- Cucumber, Lettuce and Tomatoes.
- 1 Tbsp Tesco fat Free Lemon and Black Pepper Dressing.
- 10g Runny Honey.
In a saucepan add the chopped tomatoes, onion, mushrooms, cinnamon stick, a few cloves, i usually use about 3, bay leaf, salt, pepper, garlic granules, mixed herbs to taste and a good splash of ouzo (optional). Bring to the boil and allow to reduce down, i would keep tasting the sauce as the cinnamon may over flavour the other flavors, when reduced, remove the cinnamon stick, cloves and bayleaf. Add the cooked mixed seafood stir well and transfer to a small oven proof bowl and add the halloumi sliced on top and pop in the oven, cook at the same time as the basa.
Place the basa fillet onto tinfoil, sprinkle with dill and a squeeze of lemon juice add a slice of lemon next to or on top of the fish if you prefer a more lemony taste, cover with foil and place in the oven.
Cook the basa and seafood mix on the top shelf of the oven at 160/170 deg for approx 20 mins, remove foil about 5 mins before end of cooking to crisp up slightly, if your seafood mix cooks before the basa (i.e. halloumi starts to burn) remove from oven and wrap in tin foil placing it back in the oven till the basa has finished cooking.
Meanwhile, in a frying pan cook the tuna fillet, in another frying pan, cook the salmon fillet, cooked the raw prawns in a lidded saucepan, ensuring they are completely pink.
Mix together the honey and mustard and brush onto the top of the salmon a few mins before the end of cooking. Add the stir fry sauce to the tuna at the end of cooking, until the sauce is hot, turning the steak once to allow the sauce to coat both sides of the tuna.
Add all the salad ingredients to a bowl and mix with the lemon and pepper dressing, adding a sprinkle of oregano on top.
Arrange fish onto a platter and enjoy.
