Recipe Christmas Meatloaf

A juicy meatloaf made with Lean Turkey Mince, Cranberry Sauce and Winter Spices. This is made with store cupboard ingredients, and is best made in the morning and refrigerated for a few hours to make the meatloaf more solid, enjoy all those lingering winter smells.

Ingredients:

Lean Turkey Mince 2% 400g
Lea and Perrins 1 tbsp/15 ml
Chopped Tomatoes 400g tin
light soy 1 teaspoon/7.5ml
Cranberry Sauce 30 grams
Mixed Spice 1 teaspoon
Whole Grain Mustard 1 teaspoon
Runny Honey 10 grams
Paprika 1 teaspoon
Garlic Clove
Red Onion 1
Mushrooms 85 grams
Mixed Dried Herbs
Salt
Pepper
Cinnamon 1/4 teaspoon
2 slices fresh orange

Method

Either chop or whizz together the mushrooms, onion and garlic add to the bowl of turkey mince, add the cranberry sauce, mixed spice, mustard, paprika, add salt, pepper and mixed herbs to taste and mix well, the mixture should be slightly sticky but binded together well, place in a small foil lined loaf tin.

Drain the tomatoes well in a sieve using the back of a wooden spoon to get out as much juice as possible. In a bowl mix together the soy sauce, honey and tomatoes and spoon on top of the meat mixture, top with 2 slices of orange sprinkled with the cinnamon, cover with foil and chill in the fridge for a few hours.

Preheat the oven to 180 degrees and bake for approximately 40 minutes, check the meat is cooked all the way through, uncover and cook for approx 10 minutes to glaze over the oranges.

Take care when removing foil from meatloaf as there will be some residual oil from the meat, using a fish slice/spatula lift from foil and place onto a warmed plate, serve and enjoy.

    1. Your welcome, I hope you enjoy it, I’m going to make it again and put a little more mixed spice in and maybe some whole cranberries as well, also not mix the honey and soy sauce into the tomatoes, but pour the mix over the oranges at the end of cooking to give it a bit more glaze.
