Serves 4 approx 105 cals per serving
600g Carrots
1 Red Onion
140g Seasonal Squash/Pumpkin
2 Garlic Cloves
1 Teaspoon Mixed Spice
1 Teaspoon Ground Coriander
Black Pepper
Mixed Herbs
1 pint of cold water
Juice of 3 oranges approx 1/2 pint
Chop carrot, squash, onion and garlic cloves, season with mixed spice, coriander, pepper, mixed herbs add to a large saucepan, add the water and bring to the boil for approx 15 mins.
Add the orange juice, simmer for another hour covered, then remove lid and allow to simmer until most of the fluid has gone, about an hour, blend and enjoy.
