Here is another chicken recipe for you to try, mine comes in at 382 calories, 32g Carbs, 5g fat, 47g Protein, To get your accurate calories you will need to weigh and count your own ingredients if not using my measurements. (I have made this one portion size to my needs).
As Neil doesn’t need to count calories, his has a sweet potato, peppers and chorizo in his, I don’t like sweet potatoes or peppers, but i don’t have the chorizo as it is high in fat and calories, unless im on my ‘off day’ and I have a paella.
150g Cooked Chicken Breast
30g Light Mozzarella
61 g Baby Plum Tomatoes
1/4 Teaspoon Whole Grain Mustard
15g Mango Chutney
36g Chantenay Carrots
1/2 Red Onion approx 44g
20g Green Beans
1 Teaspoon Balsamic Vinegar
Chop the mozzarella and mix together with the mango chutney, and stuff well into the chicken breast.
Mix together the honey and mustard and spoon over the top of the chicken.
Season the mushrooms with salt, pepper, garlic granules and mixed herbs and arrange in a baking tray with the chicken and cover with foil.
Par boil the vegetables then add to a bowl season with salt, pepper, garlic granules and mixed herbs to taste.
Mix together the Balsamic Vinegar and Honey and add to the bowl of veggies, mixing well to coat all the veggies, add to a roasting tin and cover with foil.
Place the chicken on the top shelf of the oven and the vegetables on to the middle shelf, cook at 180 degrees for approx 30 minutes, remove foil and cook for about another 10 mins to all the foods to crisp a bit, DO NOT DO WHAT I DID AND TAKE A PHONE CALL AND FORGET ABOUT IT, Hence why my pics are a bit on the burnt side, ooopppssss.
