Fruity Chicken Bake.

This recipe is very similar to my strawberry chicken bake, i have been playing around with fruit and meat to see what i can come up with, some work, some don’t, although the concept is similar the taste is different.

Protein: 44.5g

  • 40g Egg Plant
  • 40g Courgette
  • 30g Fresh pineapple
  • 65g cauliflower
  • 20g mange tout
  • 20g Green Beans
  • 100g Mushrooms
  • 35g Light Mozzarella
  • 5g Honey
  • 0.5 tbs Light Soy Sauce
  • 135g Chicken breast (Cooked)
  • 55g Strawberries


Chop the pineapple into chunks and arrange in the bottom of an oven proof dish, par boil all of your veggies and split into 2 piles, add 1 pile to the dish layering and season well, cut or tear up the chicken breast and mozzarella and add to the dish, laying the 2nd pile of veggies on top and season, slice the mushrooms to cover the veggies, cover with tin foil or lid and cook in the oven at 160 degrees for approx 30-45 mins until all food is piping hot throughout.

Meanwhile, mix the honey and soy sauce together and slice the strawberries mixing them into the honey mix.

When chicken and veggies are hot all the way through remove the foil and arrange strawberries on top drizzling over the juice, return to the oven uncovered for about 5-10 mins taking care the strawberries and honey do not burn.
