Vegetarian Garni.

These gorgeous parcels ( as told to me by my taste tester husband), were definitely a winner, I don’t like sweet potato but with the Mulled Wine sauce I really enjoyed them.

They average out at, approx. 98 calories per garni.

You do not need to stick to the weights I have used they are just a guideline on the size of the vegetables that i had at home, the calories only really come from the mulled wine, if your wine is a bit bitter as some are, just add a teaspoon of sweetener at a time while boiling the wine, try not to burn your mouth when testing the hot wine, also don’t test to much or you will have none left to pour on the veggies and it could be a bit tricky on your feet in the kitchen 🤔.

Ingredients

68g Sweet Potato = 57 cals
51g Carrot = 15 cals
13g Asparagus Spears x2 = 3 cals
11g Mange Tout x6 = 3 cals
22g Parsnip = 16 cals
30g Leek =18 cals x2 Large Leaves
100ml Mulled Wine = 80 cals
1/4 teaspoon Mixed Spice
Mixed Herbs
Garlic Granules
Salt & Pepper
Fry Light x 10 sprays = 10 cals
4 strips of leek for tying up the garnet

How to….

Par boil sweet potato and carrots, add asparagus, mange tout and parsnip at the end turning off the heat and leaving the lid on the saucepan for a few minutes to soften the added vegetables.


Peel off 2 large leaves from a leek, ( I didn’t soften them 1st, but will next time to see if there easier to wrap).


Drain veggies and add to a bowl, sprinkle with the mixed spice and season to taste with Salt,Pepper, Garlic Granules and Mixed Herbs.


Spray a baking sheet with Fry Light, arrange vegetables inside the leek leaves, wrapping and securing with ties made from strips of leek.

In a saucepan add the Mulled Wine and boil rapidly to reduce down into a syrup, stirring frequently this should take approx 10 mins, divide the syrup between the 2 garni spooning onto the top of the veggies.


Add a couple more sprays of Fry Light to the top of the wrapped garnets and place in a warm oven at 160 degrees, for approx 20 mins, keep checking to ensure the leeks do not burn.
Serve and Enjoy.
